2-アミノ-3,8-ジメチルイミダゾ-[4,5-f]-キノキサリン(MeIQx)は、高温で調理された魚や肉に含まれる食物由来の発がん物質です。1 これは、シトクロムP450(CYP)アイソフォームCYP1A2およびN-アセチルトランスフェラーゼ2を介してUV5細胞において人間の酵素を発現させた場合に加水分解と後続のO-アセチル化によって活性化され、DNAと反応して付加体を形成する代謝産物になります。2 MeIQx(食事中の200 ppmおよび400 ppm)はラットで腫瘍形成を引き起こします。3
