Acetylcholinesterase (Electric eel)(AChE)는 뉴로뮤스클러 접합점과 콜리렐릭 시냅스에서 주로 발견되는 콜리렐릭 효소이다. Acetylcholinesterase (Electric eel)의 주요 기능은 에세트릴콜리렉과 다른 에세트릴콜리렉 에스터를 에세트산과 콜린으로 분해하거나 수소화시키고 이로써 뉴런과 시냅스 간의 신호 전달을 종료하고 에세트릴콜리렉(ACh)이 근처 수용체의 흡착과 활성을 방지하고 생화학 연구에서 사용된다[1].
37℃, 0.1 mol/L pH=8.0 인산염 버퍼 조건에서 아세틸콜린에스테라아제의 효소 활동은 매분당 1μmol의 에세트릴시안콜린 이오화물 (ATCI)을 분해하는 데 필요한 효소량으로 측정되고 이는 하나의 아세 틸콜린에 테라아제 활동 단위로 정의된다.
특정 조건하에서 유기인산 염과와 카바마트는 콜리 에스테라아제의 정상 기능을 억제한다. 억제 정도는 농약의 농도에 직접적으로 비례한다. 일반적으로 해당 효소는 신경전달물질 메타볼라이트 (에세트릴콜리렉)의 수소화를 촉매하고 이는 색소 개발제와 반응하여 노란색 물질을 생성한다. 시간에 따라 흡광도 변화를 분광광도계를 이용하여 측정하고 억제율을 계산한다. 유기인산염과 카바마트의 존재는 억제율로 판명된다.
