Description

5α,6α-Epoxysitosterol is a minor β-sitosterol oxidation product and 5,6-epoxy thermo-oxidation product of sitosterol [1] [2].

In Vitro, 5α,6α-Epoxysitosterol (5,6α-epoxysitosterol) is a minor thermal oxidation product generated from pure β-sitosterol at 180 °C[1]. 5α,6α-Epoxysitosterol is a minor thermal oxidation product formed from β-sitosterol in corn oil, lard and olive oil at 180 °C[1]. 5α,6α-Epoxysitosterol is a product formed by heating natural sitosterol in rapeseed oil[2].
