Chitin es una variedad de azúcares extraídos de las cáscaras de los crustáceos marinos y se encuentra ampliamente en camarones y cangrejos en la naturaleza [1]. Chitin es un polisacárido lineal del aminoazúcar N-acetylglucosamine y está presente en la matriz extracelular de varios invertebrados, incluyendo esponjas, moluscos, nematodos y artrópodos, así como hongos [2]. La estructura de la quitina es comparable a la celulosa, formando nanofibrillas o bigotes cristalinos, y es funcionalmente comparable a la proteína queratina [3]. Chitin es un regulador dependiente del tamaño de la producción de TNF e IL-10 de macrófagos[4]. Chitin puede inducir la polarización de los macrófagos M2 in vivo activando las vías de señalización del receptor TLR2 y Dectin-1, promoviendo respuestas antiinflamatorias y de reparación de tejidos[5]. Chitin puede inducir a los fibroblastos a liberar interleucina-8 (IL-8), que está involucrada en la migración y proliferación de fibroblastos y células endoteliales vasculares[6].
