It has a strong ability to dissolve the live cell wall of yeast, producing protoplasts or protoplasts of various yeast cell lines.
The essential enzyme that determines the activity of yeast cell wall dissolution in this enzyme product is β- 1,3-glucan kunbu pentasaccharide hydrolase( β- 1,3-glucan laminaripentaohydrolase, which hydrolyzes β- Linearized glucose polymer with 1,3 connections. Releasing specific Kunbu pentasaccharides (also the main and smallest hydrolysis product unit)
