Glucose oxidase(100-250u/mg)은 누룩곰팡이에서 유래한 산화환원효소이다. 산소와 포도당이 존재할 때 Glucoamylase(100-250u/mg)은 항균 활성을 보일 수 있다.
Glucoamylase(100-250u/mg)은 누룩곰팡이에서 유래한 노란색 비정질 분말이다. 효소 커미션 번호는 EC 1.1.3.4이다. 특정 조건(pH 5.7, 37°C)에서 한 단위의 Glucoamylase는 분당 1μM 포도당을 산화시킬 수 있다. 효소의 분자량은 SDS-PAGE에 의해 결정된 약 150 kDa이다. 등전점는 5.2로 일정한 전하 특성을 보인다.
기질 D-포도당에 대해 효소의 미칼리스 상수는 4.9×10⁻² M이다. 실제 측정 결과 제품의 pH 안정성은 5.5~7.5(25°C, 18시간)이고 열 안정성은 <40°C(pH 5.7, 60분)이다. 주목할 만한 점은 Cu²⁺, Fe³⁺, Mg²⁺, Mn²⁺ 등과 같은 금속 이온이 Glucose oxidase(100-250u/mg)에 대한 억제 효과가 있다는 것이다. Glucose oxidase(100-250u/mg)는 β-D-pyranose 포도당에 특이적으로 결합하고 α-D-포도당에는 작용하지 않는다. 공기와 포도당이 존재할 때 Glucose oxidase(100-250u/mg)는 β-D-포도당의 산화를 촉매하고 D-glucono-1,5-lactone을 생성하고 글루콘산으로 수분해된다[4]. Glucose oxidase(100-250u/mg)는 혈당 모니터링, 식물 원료 및 식품 산업에서의 자유 포도당 검출, 식품 보존 등에 널리 사용된다. 게다가 생물 기술 분야에서도 많은 응용이 있고 일반적으로 생화학 분야의 효소 분석, 나노 기술 분야의 바이오센서 등에 사용된다[5].
