Homoglutathione is a taste-modifying peptide responsible (in combination with γ-glutamyl peptides as γ-Glu-Leu (G-1950) and γ-Glu-Val (G-2015)) for the "kokumi" flavor. Pesticides containing electrophilic centers can be metabolized in legumes via conjugation to homoglutathione (H-3944) or glutathione.
