Chitin est une variété de sucres extraits des coquilles de crustacés marins et est largement présente dans les crevettes et les crabes dans la nature[1]. Chitin est un polysaccharide linéaire du sucre aminé N-acétylglucosamine et est présente dans la matrice extracellulaire de divers invertébrés (comprendre les éponges, les mollusques, les nématodese et les arthropodes, ainsi que les champignons)[2]. La structure de chitin est comparable à celle de la cellulose, formant des nanofibrilles cristallines ou des ''whiskers'' (moustaches cristallines), et est fonctionnellement comparable à la protéine kératine[3]. Chitin est un régulateur taille-dépendant pour la production de TNF (facteur de nécrose tumorale) et d' IL-10 (interleukine 10) des macrophages[4]. Chitin peut induire la polarisation des macrophages M2 in vivo au moyen d'activer les voies de signalisation des récepteurs TLR2 et Dectin-1, tout en favorisant les réponses anti-inflammatoires et de réparation tissulaire[5]. Chitin peut induire les fibroblastes à libérer l'interleukine-8 (IL-8), qui est impliquée dans la migration et la prolifération des fibroblastes et des cellules endothéliales vasculaires[6].
